How to Steam Pastrami

Pastrami originated in Romania and comes from the word pastrama which means pressed meat. Once pastrami is cooked, it is commonly used in such sandwiches as the Rachel sandwich, and the Reuben sandwich. If you desire to cook and serve your own pastrami, you can do this by steaming the pastrami over the course of 3 1/2 to 4 hours. Add this to my Recipe Box.

Instructions

    Rinse and pat dry 3 pounds of a brisket of beef. Set it in a large bowl.

    Combine 1 1/2 tsp. of garlic powder, 1 1/2 tsp. of black pepper, 1 tbsp. of toasted coriander seeds, 1 tbsp. of salt, 1 tsp. of mustard powder, 1 tsp. of allspice, 1 tbsp. of brown sugar and 2 tsp. of saltpeter in a small bowl. Pour over the brisket of beef and cover with aluminum foil. Set in the refrigerator overnight.

    Place the steam basket in the stockpot, and pour water inside the stockpot until it comes within 1 inch of the steam basket.

    Place the marinated brisket of beef in the steam basket and cover with the lid to the stockpot. Set the heat setting to medium-low heat. Cook for three to four hours, or until the pastrami is tender.

    Remove the steam basket from the stockpot and allow the pastrami half an hour to cool. Then slice and serve.
